Mango Pachadi

Mango (Manga) Pachadi is a thick gravy curry, eaten with hot rice, and other curries. The taste is um... tich !!! As it is cooked with green mangos, it is a sour curry, but goes great with a little curd, and an additional hot curry, which helps to neutralize the taste ! Go ahead try this manga pachadi of Kerala.

1 Fresh Green Mango 2 medium sized Grated after removing skin
2 Salt To taste
3 Sugar Pinch  
4 Coconut 1/2 cup Grated
5 Green Chillies 3 to 5  
6 Mustard seeds 1/2 teaspoon  
7 Curry Leaves 1 stalk  
8 Onions 2 medium sized Cut into small pieces
9 Ginger 1 inch Cut into small pieces
10 Cumin Seeds 1/2 teaspoon  
11 Oil 1 tablespoon  

Preparation
  1. Heat oil, add mustard seeds, when they start sputtering, add the onion, green chillies and ginger, fry till tender.
  2. Add grated green mango, curry leaves, and salt. Add little water, cook at a low heat.
  3. Grind grated coconut, mustard seeds, and cumin seeds to fine paste.
  4. When the pieces are cooked add sugar into it, cook till the additional water is evaporated.
  5. Add the grinded paste into curry, mix well. Add a little water or coconut milk, mix and remove from heat when curry becomes consistent.
  6. Serve hot rice.
